Nic Maraziti
Chef de Cuisine

Nic was born and raised in Aspen, Colorado, and cut his teeth in restaurant kitchens and on organic farms in various pockets of the Pacific Northwest. From working at Portland restaurants like the Bent Brick, Ava Gene’s and Tournant’s traveling wilderness kitchen, to running the show at Piccone’s Corner and Rainshadow Organics, Nic found inspiration in the stories behind the ingredients and began to weave a cuisine with a deeper sense of place.

In his role as chef de cuisine at Brick Hall, Nic is focusing in on relationships and storytelling. With a love for regional Italian cuisine and a commitment to the seasonal, the small-scale and hand-worked, he offers his voice to the ongoing dialogue of time and place, and the way we shape the future when we sit down to eat together.
